  • 4 Cups Crispy rice cereal. Brown rice crisp cereal also works, especially if you’re looking for a healthier, whole-grain alternative.
  • 1/2 Cup Natural almond butter. Look for a high-quality option, like Kindly of Brighton; it provides just the right amount of fats to bind the ingredients—and a rich flavor that resembles the classic recipe.
  • 1/3 Cup Maple syrup. Increase or decrease based on personal preference.
  • 1 Tsp Vanilla extract. For a bit of depth to this kid classic.
  • 1/4 Tsp Sea salt. Rounds up the overall flavors.
  • 1/2 Cup Chocolate buttons. Totally optional, but who would say no to a bit of extra chocolate?
  • 1 tsp Coconut oil. If you don’t like the taste of coconut, an odorless, refined coconut oil works just as well, so add whatever is available (or what delights your taste buds).

Method

Step 1: Prepare the Base

Combine almond butter, maple syrup, vanilla extract, and sea salt in a pan over medium heat. Stir until well mixed (about 2 to 3 minutes).

Step 2: Add in the Rice Cereal

Open the pack of your crispy rice cereal in a large bowl, and top it with the warm almond butter mixture. Use a spatula to gently fold everything together. Make sure to work quickly, though; we want the mix to be evenly coated.

Step 3: Press & Set

Line a baking dish with parchment paper. We used an 8x8 one; you can use what’s available. Then, transfer the crispy rice mixture into the dish, and press it down firmly using the back of a spoon.

Step 4: Chocolate Drizzle

The best part of the recipe (at least in our opinion 🤤). Just melt the vegan chocolate chips and coconut oil in 20-second intervals, stirring between each, until smooth, after which you can drizzle it over the rice crispy layer. We love to use a fork to create a fun swirled pattern.

Step 5: Chill—and Enjoy!

Leave the treats for about 30-45 minutes in the refrigerator. Once firm, cut it into squares, and enjoy. The wait will be worth it, we promise.
